Food is the beating heart of Verdigris. It matters to everyone of us but for Scott it's at the centre of everything he does. Nothing but the very best will do. We believe that what we eat impacts directly on our well being. We also believe that a respect for life, a sense of gratitude and a loving touch contribute to the taste and health giving properties of food. Scott visits our suppliers, from farm to abattoir and will only source from those who share his ethos.
We know that Mother Nature is and always will be the true artist but we love to work with Her.

Attention to detail in everything we do is key to delivering the customer experience that matters so much to us at Verdigris. This attention is honed to a whole nother level with our wine list. Our sommelier, Marco, has been evolving the Verdigris wine selection. Calling upon his many years of experience and working closely with Scott for fabulous food pairings.
